Fluffy Chocolate Chip Pancakes with Maple Syrup

 

Ingredients

For the Pancakes:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups whole milk (or buttermilk for extra fluffiness)
  • 1 large egg
  • 2 tablespoons unsalted butter (melted, plus more for greasing the pan)
  • 1 teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips 







For Serving:

  • Maple syrup (as desired)
  • Additional chocolate chips (optional)
  • Butter (optional)
  • Fresh fruit (optional)

Instructions

  1. Prepare the Batter:

    • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.
    • Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy; avoid overmixing.
    • Fold in the chocolate chips.
  2. Preheat the Pan:

    • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter or non-stick spray.
  3. Cook the Pancakes:

    • Scoop about ¼ cup of batter for each pancake onto the hot skillet. Use the back of a spoon to spread the batter slightly if needed.
    • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
    • Flip the pancake gently with a spatula and cook for another 1-2 minutes until golden brown.
  4. Keep Warm:

    • Transfer the cooked pancakes to a plate and cover them with foil to keep warm. Repeat with the remaining batter, greasing the pan as needed.
  5. Serve:

    • Stack the pancakes on a plate and top with a pat of butter (optional). Drizzle generously with maple syrup.
    • Add extra chocolate chips or fresh fruit, like strawberries or bananas, for a fun twist.
