Ingredients
For the Pancakes:
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 ¼ cups whole milk (or buttermilk for extra fluffiness)
- 1 large egg
- 2 tablespoons unsalted butter (melted, plus more for greasing the pan)
- 1 teaspoon vanilla extract
- ½ cup semi-sweet chocolate chips
For Serving:
- Maple syrup (as desired)
- Additional chocolate chips (optional)
- Butter (optional)
- Fresh fruit (optional)
Instructions
Prepare the Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy; avoid overmixing.
- Fold in the chocolate chips.
Preheat the Pan:
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter or non-stick spray.
Cook the Pancakes:
- Scoop about ¼ cup of batter for each pancake onto the hot skillet. Use the back of a spoon to spread the batter slightly if needed.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancake gently with a spatula and cook for another 1-2 minutes until golden brown.
Keep Warm:
- Transfer the cooked pancakes to a plate and cover them with foil to keep warm. Repeat with the remaining batter, greasing the pan as needed.
Serve:
- Stack the pancakes on a plate and top with a pat of butter (optional). Drizzle generously with maple syrup.
- Add extra chocolate chips or fresh fruit, like strawberries or bananas, for a fun twist.
